Yes — its Gold Cup preset is built to the SCA's certified-brewer standard (proper temperature range and brew time). The difference from other certified machines is that here the standard is a starting preset, not the ceiling: you can deviate from it on purpose.

What does adjustable bloom time actually do?

Bloom is the pre-wet pause that lets fresh coffee release CO2 before full brewing — skip it on fresh beans and the gas repels water, under-extracting the cup. Longer blooms suit fresher, lighter coffee; stale supermarket grounds barely need one. It's the same physics as crema, applied to filter brewing.

Can it really replace a pour-over setup?
