How to Make a Flat White at Home
A flat white is a strong shot and a small amount of the silkiest possible milk. Here's the ratio, the microfoam technique, and how it differs from a latte.
A flat white is the coffee-forward member of the milk-drink family: a strong double shot — often a double ristretto — under a small amount of the silkiest, thinnest microfoam you can make. It is smaller than a latte, with a higher proportion of coffee to milk, and it lives or dies on milk texture rather than milk volume. Get the shot strong and the foam glossy and you have arguably the best-balanced espresso-and-milk drink there is.
The flat white came out of Australia and New Zealand and spread worldwide, and along the way it collected a lot of confusion about what actually makes it different from a latte. The short answer is ratio and texture, not any secret ingredient. Flat white vs latte vs cappuccino
All three are espresso and steamed milk. What changes is how much milk, how much foam, and how big the cup is. The flat white sits between the cappuccino and the latte: stronger and smaller than a latte, but with far less foam than a cappuccino and a much silkier texture.

The gear you need

- A capable burr grinder. A strong double or ristretto shot needs a fine, even grind to extract properly.
- A small milk pitcher. A small pitcher is easier to control when you only need a few ounces of milk, and it is what lets you pour a clean flat white.
- A 5-6 oz cup. Cup size is part of the recipe. In a big mug, a flat white is just a weak latte.
The routine, step by step

- Start with cold milk, filled low. Pour cold milk into a chilled pitcher to just below the base of the spout. You need only a small amount, so a small pitcher helps.
- Texture for the thinnest microfoam. Introduce only a brief whisper of air at the surface — much less than for a cappuccino — then sink the wand and spin the milk into a tight whirlpool. - Stop at the right temperature.Around 140-150°F (60-65°C) keeps the milk sweet. A flat white is small, so a scalded, over-hot milk has nowhere to hide.
- Swirl and pour close. Tap and swirl the pitcher to keep the milk and foam integrated, then pour steadily into the shot, dropping the spout close to the surface at the end to lay a thin, glossy cap. Where home flat whites go wrong
The two most common mistakes are too much milk and too much foam. If your drink tastes like a small latte, you either used a single shot or filled a too-large cup — reach for a double ristretto in a 5-6 oz cup. If the foam sits thick on top, you introduced too much air; a flat white wants barely any stretch and a long spin to keep the milk dense and velvety. Everything else is the same milk skill you would use for any cafe drink, just pointed at a smaller, stronger cup.
Getting the flat white texture right
The flat white is defined by texture more than any other milk drink, so it is worth understanding what actually produces that dense, velvety mouthfeel — and where home versions usually fall short.
Stretch less than you think
The whole game is minimal air. Where a cappuccino wants a long stretch to build a deep foam, a flat white wants only a second or two of air before you sink the wand and spend the rest of the time spinning. The goal is milk that looks like glossy wet paint with no distinct foam layer — just a uniform, silky texture from top to bottom. If you can see bubbles, you added too much air.
Why a ristretto base helps
Because a flat white uses relatively little milk, a standard shot can taste thin or sour once it is diluted. A double ristretto — pulled short at roughly a 1:1 ratio — is sweeter and more concentrated, so it holds its own against the milk in a way a longer, more bitter shot does not. Whole milk is the safe default
Whole dairy milk textures into the densest, sweetest microfoam with the widest margin for error, which is exactly what a flat white needs. Among plant milks, a "barista" oat milk is the only one that reliably reaches the same silky density; standard almond and soy tend to stay bubbly or split.
