How to Make Pour-Over Coffee
Bloom, pour in stages, finish by three minutes. What actually matters in the ritual — and the parts that are just theater.
Pour-over has accumulated more ritual than any brewing method — scales, timers, spiraling gooseneck choreography — and it genuinely rewards care. But not all the ceremony pulls its weight. Here is the method, honestly split into what changes the cup and what is just pleasant theater.
The method
Setup: filter in the dripper (V60, Kalita, whatever you own), rinsed with hot water — this kills paper taste and preheats; it's worth doing. Dose at 1:16 (22g coffee, 350g water for a mug), medium-fine grind. Bloom:start the timer, pour about twice the coffee's weight in water (~45g), wet everything, wait 30-45 seconds while the fresh coffee degasses — skip this on fresh beans and CO2 repels the water, souring the cup. Main pours: add the rest in two or three stages of slow, steady spirals, keeping the bed submerged but not flooded. Target: all water in by ~2:00, drawdown done around 2:30-3:30. Taste; adjust grind (slow and bitter → coarser, fast and sour → finer).
What actually matters, ranked
Grind uniformity towers over everything — pour-over punishes uneven grinding worse than any method, which is why the grinder ranking matters more than the dripper. Then ratio (weigh it), then the bloom (real, cheap, skip-proof), then pour rate— steady beats artful; the gooseneck kettle earns its place simply by making steady possible. Below that: water temperature in the just-off-boil zone is fine for most roasts, and the fabled center-only-never-touch-the-walls spiral is mostly theater. Steady, submerged, on time — that's the whole pour.
If your cups are inconsistent, audit in that order: grinder, scale, bloom, pour. Ninety percent of pour-over problems live in the first two — the same two the ratio guide and a $20 scale fix permanently.
