How to Use a Gooseneck Kettle for Pour-Over

A gooseneck kettle is the single most useful tool for pour-over coffee, and the reason is simple: control. Its long, narrow, curved spout lets you place a thin, steady stream of water exactly where you want it, at exactly the speed you want. That control is what separates an even, sweet pour-over from a patchy, sour, or bitter one. Why the spout matters

On a normal kettle, water gushes out in a wide, uncontrollable stream — fine for tea, useless for pour-over. The gooseneck's narrow spout does three things a regular kettle cannot: it lets you aim the water precisely onto the coffee bed, it lets you control the flow rate from a trickle to a steady stream, and it lets you keep a consistent height and speed throughout the pour. Those three controls are the whole reason pour-over enthusiasts insist on one. Get the temperature right first

Before technique comes temperature. The Specialty Coffee Association and the National Coffee Association both point to a brewing window of roughly 195-205°F (about 90-96°C) — just off the boil. Too hot and you scorch the grounds and pull out bitterness; too cool and the coffee under-extracts and tastes sour and weak. Start with the bloom

The bloom is the first, most important pour. Fresh coffee is full of trapped carbon dioxide, and if you do not release it, the gas repels water and causes uneven extraction. To bloom:

  1. Pour just enough water to saturate the grounds — roughly two to three times the weight of the coffee (for 20g of coffee, about 40-60g of water). Pour in a slow spiral from the center out so every ground gets wet.
  2. Watch it puff up and bubble.That rising, foamy dome is the trapped gas escaping — the "bloom." Fresh coffee blooms vigorously; stale coffee barely reacts, which is a useful freshness test.
  3. Wait 30 to 45 seconds before continuing. This degassing sets up a much more even extraction for the rest of the brew.

Pour rate, height, and pattern

  • Pour in slow, concentric spirals.Start in the center and spiral outward, then back in — this wets the grounds evenly. Avoid pouring directly onto the filter's edge, which lets water bypass the coffee entirely and weakens the cup.
  • Pour in stages if it helps. Many recipes add water in two or three pulses, letting the level draw down partway between them. This keeps the extraction even and gives you more control than one continuous pour.

Putting it together

A complete pour-over with a gooseneck looks like this: heat water to the 195-205°F window, bloom with 2-3x water for 30-45 seconds, then pour the rest slowly in steady spirals from a low height, keeping the bed evenly saturated, until you hit your target water weight. The two habits that most improve a beginner's pour-over are pouring slower than feels natural and keeping the spout close to the coffee bed. Pour control matters, but it works with the grind, not instead of it.
